This lemon pickle recipe is almost identical to the lime pickle recipe. It’s simple to make and doesn’t take quite as long to make because lemons have thicker pith that helps the fermentation process. 
This lemon pickle recipe produces a pickle that is of a medium heat though you can increase or decrease the amount of chilli powder to your taste. The lemon pickle tastes as good as it looks and should be eaten within 12 months.
The Lemon Pickle Recipe
The equipment you need to make Lemon Pickle recipe
A resealable container in which to make the Lemon Pickle. I use large glass pickling jars with hinged lids but a plastic food container with a resealable lid is just as good. The key is that the containers should be made out of a passive material.
The ingredients for the Lemon Pickle recipe.
16 lemons
5 tbl spoon salt
3 teaspoon turmeric
1 tbl spoon white vinegar
250 gram skinless split mustard (slightly crushed)
50 grams crushed fenugreek seeds
5 tbl spoon red chilli powder.
1 tea spoon asafoeteida powder
2 cups vegetable oil
The method used to make the Lemon Pickle recipe.
The fermenting process used when making lemon pickle recipe needs a comfortable room temperature to work. If you can arrange the fermenting lemon pickle to be in direct sunlight so much the better but it’s not essential.
1- Cut each lemon into 8 or 16 pieces.
2- Add salt, turmeric and white vinegar.
3- Stir well ensuring that every piece of Lemon is well coated.
4- Then set aside in your storage jar.
5- Stir the mixture thoroughly every alternate day for 2 weeks or until the Lemon pieces are soft and tender. Re-seal the contain er between each stirring session.
6- Add the rest of the ingredients.
7- Mix the contents well and store for 1 additional week. The lemon pickle is then ready to be used.
Change the lemon pickle recipe to your taste
The first three weeks of the fermentation process in the lemon pickle recipe make the lemon pickle, the last week adds the flavouring.
For instance, for a sweeter pickle, try adding sugar or jaggery. As said before, use either more or less chilli powder to vary the overall spiciness of the Lemon pickle. You can add virtually any spice to change the taste of the lemon pickle to suit your palate.

In your quick Lime pickle you state 4 cups of white vineger, is this correct
